Here’s a recipe for rolled Hunter beef with a creamy sauce:

Ingredients:

  • 2–3 lbs beef fillet or loin
  • 2 tbsp salt
  • 2 tbsp sugar
  • 1 tbsp black pepper
  • 1 tbsp coriander seeds
  • 1 tbsp mustard seeds
  • 1 tbsp paprika
  • 2–3 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 cup sour cream
  • 2 tbsp capers, drained and rinsed
  • 1 tbsp Dijon mustard
  • 1 tbsp chopped fresh dill
  • Salt and pepper to taste

Instructions:

  1. In a small bowl, mix together the salt, sugar, black pepper, coriander seeds, mustard seeds, paprika, and minced garlic.
  2. Rub the spice mixture all over the beef fillet or loin, making sure it’s evenly coated.
  3. Place the meat in a large resealable plastic bag and pour in the red wine vinegar and olive oil. Seal the bag and refrigerate for at least 24 hours, or up to 48 hours for a stronger flavor.
  4. Preheat your oven to 350°F (175°C).
  5. Remove the meat from the bag and discard any excess marinade. Lay the beef flat on a cutting board and roll it up tightly.
  6. Place the rolled beef in a roasting pan and bake in the oven for 45–60 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare.
  7. While the meat is cooking, prepare the sauce by whisking together the sour cream, capers, Dijon mustard, and chopped dill in a small bowl. Season the sauce with salt and pepper to taste.
  8. Once the meat is done cooking, remove it from the oven and let it rest for 5–10 minutes before slicing.
  9. Serve the sliced Hunter beef with the creamy sauce on the side.
